Who loves sugar cookies? What if I told you that you could make a thick & chewy sugar cookie without any rolling required? That’s what you get with these super delicious & easy Birthday Frosted Sugar Cookie Bars.

I absolutely love having frosted sugar cookies for dessert. But I have to admit, there are times when I just don’t feel like making the dough, rolling it out, cutting, chilling, baking & frosting all those individual cookies. That is where these awesome bars come in!



I love these because I can just mix the dough & spread it in the pan to bake. We could call these lazy day sugar cookies, because they are so simple. Then just add the frosting when they are cooled & you are good to go.

Ingredients
Bars

  • 1/2 cup butter softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 egg white
  • 1-1/2 tbsp sour cream
  • 1 tsp vanilla extract
  • 2-1/2 cups flour
  • 1/2 tsp baking powder
  • ½ tsp table salt

Frosting

  • 1/4 cup butter softened
  • 2 cups confectioners sugar
  • 2-3 tbsp milk
  • 1/2 tsp vanilla
  • pinch table salt
  • 1/4 cup rainbow non-pareil sprinkles

Instructions

  1. Preheat oven to 375.
  2. Line a 9 x 13 pan with parchment & spray lightly with cooking spray – set aside.
  3. In a mixer bowl with the paddle attachment, cream together butter & sugar until light & fluffy.
